Pistachio chocolate chunk cookies (vg, gf)

My all time favourite cookie recipe – full of chocolate, pistachios, and a generous sprinkle of flaky salt.

If you can’t already tell I’m pretty much addicted to cookies. I am also gluten-free meaning it can be a pretty inconvenient addiction to maintain… but of course I find a way! To do so I have made the best tasting cookies in THE WORLD, that just happen to be vegan, gluten-free, and refined sugar free.

Chewy cookies with a crisp golden edge, filled with pure pistachio butter and melty pools of chocolate. I have used oat flour, my personal favourite gluten-free substitute, and a pretty generous amount of pistachios to create the perfect nutty flavour.

To keep this recipe refined sugar free, I’m using coconut sugar as my sweetener and Hu chocolate, which is also sweetened with coconut sugar. Feel free to experiment with others!

Wholesome pistachio & chocolate chunk cookies
prep: 15 mins // serves: 8 // cook time: 11 mins


Ingredients:
• 95g coconut oil, room temp
• 45g pistachio butter
• 3 tbsp aquafaba
• 170g coconut sugar
• 190g oat flour
• 2tbsp flax meal
• 1 tsp baking soda
• 1/4 tsp salt
• 70g dark chocolate (I use Hu), chopped
• 35g pistachios, chopped
• Flaky salt for topping


Method:
• To a large mixing bowl add the coconut oil and pistachio butter.
• Whip to combine, be sure there are no lumps of coconut oil.
• Add the coconut sugar and aquafaba, whip again.
• Add the oat flour, baking soda, flax meal and salt. Mix briefly.
• Add the dark chocolate and pistachio chunks, save some for topping.
• Mix until just combined, scoop into 8 large balls.
• Chill the dough for about 15 minutes in the freezer.
• In the meantime, pre-heat the oven to 180c / 160c (fan oven).
• Line a large baking sheet with parchment paper.
• Place the cookie dough balls on the sheet leaving enough room to spread.
• Top with a few chunks of chocolate and bake for 11 minutes.
• Remove from the oven, scoot the hot cookies with a larger cookie cutter to make perfect circles.
• Top with extra chopped pistachios and flaky salt.
• Let cool and enjoy!
